Clairault Estate Cabernet Sauvignon

Clairault Estate Cabernet Sauvignon is sourced from the Clairault Vineyard at Wilyabrup in Margaret River. The wine also has a small Cabernet Franc component.

The grapes are gently destemmed and crushed so that each berry only just splits. This encourages fresh, clean flavours to develop during a slow ferment with a specifically selected yeast strain.

Initially the wine is pumped over three times a day, lessening as the wine develops. After about two weeks on skins, the wine is gently pressed and sent to 50% new French barrels where it matures for 18 months.

Dark purple, Clairault Estate Cabernet Sauvignon's core of red and black fruit flavours and fine tannins lead to a mineral finish. Cellaring potential is 15 years.
